How do you save parsnip seeds in cold climates? Parsnips are biennials and take two growing seasons to produce seeds. Typically, parsnips grown for seed are left in the field to overwinter until spring, when they resume growth. However, here at Heritage Farm (Zone 4b) it gets too cold to successfully overwinter biennials outdoors, so we dig them up and store them inside our root cellar until spring.
