Deselect All. For the meatballs: 3/4 pound ground chicken. 1/2 pound chicken sausage, casings removed. 2/3 cup fresh white bread crumbs. 2 teaspoons minced garlic (2 cloves)

Preheat the broiler. Line a rimmed baking sheet with foil. Combine the ground turkey, ricotta, pesto, parmesan, 1/2 teaspoon salt and a few grinds of pepper in a large bowl.

Deselect All. 3 sprigs thyme. 2 bay leaves 2 sprigs oregano 1 teaspoon black peppercorns 1/2 cup panko breadcrumbs 1/3 cup finely grated Parmesan, plus more for serving

Heat the olive oil in a large pot over medium-high heat. Add the onion and carrots and cook, stirring, until slightly softened, about 4 minutes.

To make the meatballs: Stir the first 6 ingredients in a large bowl to blend. Stir in the cheese, beef and pork. Using 1 1/2 teaspoons for each, shape the meat mixture into 1-inch-diameter meatballs.

Deselect All. 3 (5-pound) roasting chickens. 3 large yellow onions, unpeeled and quartered. 6 carrots, unpeeled and halved. 4 stalks celery with leaves, cut into thirds
