A climate fighting machine called an anaerobic digester mimics a cow's stomach to divert thousands of tons of food waste from landfills and turn it into compost and biogas.
These digesters capture methane that would otherwise be emitted into the atmosphere, making biogas one avenue to reduce methane emissions.
Vigliotti expects to be accepting material and making biogas by the end of 2023. That’s when the real work will begin, with the facility processing an expected 180,000 tons of food waste per year.
